Aspect: Over a ridge running North to south, aspects are a portion east and a portion west.

Notes: It is a relatively young block that is on the ridge at the top of the farm at about 350 meters above sea level. The site is spectactular with views up the Simonsberg mountain to the east and table mountain to the west. The blocks exposure means the prevailing summer breezes off the sea cool the block down in the afternoons.
Sorting: Bunches sorted on a conveyor belt.
Fermentation: Lightly pressed and settled before spontaneous fermentation in a stainless steel tank. Fermented at 18 degrees celcius. Racked and bottled straight after fermentation. No time on the lees.
Maturation: Bottled early. Maturation to take place in bottle.
Tasting Notes & Analysis
Colour: Pale straw colour.
Nose: The nose shows an array of bright fruit such as granadilla, grapefruit, peaches and lemons.
Palate: The wine has a smooth entry onto the palate with all the juicy fresh fruit coming through and freshened by a limey acidity which also brings length.
